As requested, here is the recipe we used for some Pumpkin spice muffins. Its very simple. Get a boxed spice cake mix, add 1 29oz can of pumpkin pie filling and bake according to box directions. Be sure to bake a bit longer than directed as they will be very wet. Make a quick powdered sugar icing to put on them when they come out of the oven and cool for 10 minutes or so.. Yum!
